Walnut and olive oil banana loaf

There are probably millions of banana bread recipes out there, and it’s probably because it’s they’re so easy to customise. I’ve loaded this one up with healthful fats from the olive oil and walnuts so this loaf packs a real nutrition punch.

I love this recipe because, unlike many others that call for a lot of sugar, I prefer to simply enhance the natural sweetness of the bananas with a bit of honey. If you prefer a sweeter flavour simply add more honey or sugar.

Makes: 1 loaf | Time: 1 hour

Ingredients:

2-3 large very ripe bananas 
1/3 cup olive oil
1 large egg beaten
1 tsp vanilla extract 
Pinch of salt 
1/4 tsp cinnamon
1/4 cup chopped walnuts
1 1/2 cup self-raising flour (or 1 tsp baking soda with plain or wholemeal flour)
1/4 cup honey or sugar (add more if you prefer a sweeter flavour) 

Method:

  • Preheat oven to 175C (350F) and oil a 4x8 inch loaf tin

  • In a mixing bowl, mash bananas to a pulp

  • Add in all liquid ingredients

  • Add walnuts, cinnamon, salt and combine

  • Mix in flour and pour the mixture into the tin

  • Sprinkle a few more walnuts to the top for some crunch

  • Bake for 50 minutes or until the skewer comes out clean.

  • Allow to cool for a few minutes and turn out onto rack, and let it cool completely before slicing
