Greek lemon chicken and potatoes

Lots of garlic, lemon, olive oil and oregano - the hallmarks of a classic Greek dish. Say no more!

Serves: 4 | Time: 70 minutes

Ingredients:

4 whole chicken legs (quarters) on the bone with skin
3-4 medium potatoes 
1/4 cup olive oil
4 -5 crushed garlic cloves 
1 large lemon (juice of)
1/4 tsp salt and pepper 
1 1/4 tsp dried oregano 
1/4 tsp dried onion powder
1/4 tsp dried garlic powder

Method:

  • Pre-heat oven to 425f (~320 C)

  • Peel the potatoes and cut in half lengthways then into quarters

  • Trim excess skin off chicken

  • Juice the lemon

  • Peel garlic cloves and crush so they break apart

  • In a large baking dish toss the potatoes and chicken and garlic in the lemon, oregano, olive oil, salt, pepper, onion, and garlic powder - making sure to coat all pieces

  • Arrange the chicken skin side up with potatoes around

  • Pour 1/4 cup of water (or chicken broth) into the bottom of the dish being careful not to pour over the chicken and potatoes

  • Cook in the oven for 1 hour until potatoes and chicken are cooked through

  • If you like, place it under the broiler(grill) for a few minutes to develop colour - watch it closely!
