Mediterranean dipping oil

Extra virgin olive oil is THE superfood of the Mediterranean diet. High in antioxidants and anti-inflammatory properties with a healthy fat profile, it’s no wonder it shows up time and time again in Mediterranean cooking. In fact, in the Mediterranean diet, it’s recommended to have 3-4 tablespoons a day to reap the benefits. One of my favourite ways to do this is to use it as a dipping oil with some fresh bread. Here I’ve added a few more flavours to make it dinner party-worthy (and sneak in just a few more nutrients for good measure!)

Serves: 2-4 | Time: 2 minutes

Ingredients

1 garlic clove crushed
1 tbsp chopped fresh parsley
5 Tbsp good quality extra virgin olive oil
Dried chili flakes to taste
1 heaped teaspoon kalamata olive tapenade (or finely chopped olives)

Method:

  • Add all the ingredients to a small dish and combine

  • Serve with fresh bread and enjoy!
