Pea and herb salad with burrata

A fresh and hearty salad with simple flavours, this recipe is packed with protein and healthy fats- not to mention the hit of antioxidants! I love salads like these because they make fantastic party fare and keep well in the fridge so they can be added to meals as a side dish. To make this a complete meal, simply add a poached egg or a fillet of fish!

Serves: 2-4 as a side dish | Time: 5-10 minutes

Ingredients:

1/4 cup almonds 
2.5 cups frozen peas  
2 sprigs fresh mint (stems removed)
3-4 sprigs fresh dill (stems removed)
1 ball of burrata or mozzarella (approx 80-100g)
2 Tbsp extra virgin olive oil
Salt and pepper to taste
Squeeze of lemon

Method:

  • Roughly chop the almonds and toast in a dry pan over medium heat until fragrant

  • Boil peas for 4-6 minutes

  • Chop the herbs

  • Strain the peas and allow them to cool completely

  • Combine the peas and herbs in a bowl and season with salt and pepper

  • Tear the cheese into pieces over the salad

  • Top with the almonds, olive oil and a generous squeeze of lemon
