High-protein quick rice

I usually cook some version of this dish with whatever grains I have leftover or when I’m just looking for something quick and easy. It makes for a really good side dish or the base of a hearty salad, and because it’s high in fibre, protein, and healthy fats it’s really satisfying too.

Serves: 2 | Time: 10

Ingredients:

1 cup brown rice
1/3 cup roughly chopped almonds
1/2 cup frozen peas 
1 heaped Tbsp tomato paste 
1.5 Tbsp Extra virgin olive oil 
Salt + pepper to taste 

Method:

  • Cook the rice according to the instructions on the pack adding the frozen peas in to cook in the last 5 minutes

  • Roughly chop the almonds

  • In a deep pan over medium heat, fry the olive oil, tomato paste, and almonds until the tomato paste darkens slightly (3-4 minutes)

  • Add the cooked rice and peas to the pan and combine until the rice is coated

  • Season to taste

Notes:

  • I usually use quick-cook 10-minute rice and you can also use leftover rice or microwave rice.

  • This recipe will work well with any leftover grains like quinoa or pasta
