Roast veggie and goat cheese tart

This is one of those recipes to serve to guests because it looks impressive but is actually quite simple and easy to cook. The key to making the flavours pop is using sweet tomatoes and good quality smoked paprika.

Makes: 6 | Time: 50 minutes

Ingredients:

1 large red capsicum
1/2 large red onion
A punnet (about 20 or so) cherry tomatoes halved or 6 Roma tomatoes quartered
1 tsp sweet smoked paprika
Pinch of salt
60g goat cheese
3 tbsp extra virgin olive oil 
9 sheets of filo pastry

Method:

  • Preheat oven to 220C (4250F)

  • Finely slice capsicum, onion, and cut tomatoes

  • Combine the vegetables, 1 tbs olive oil paprika, and salt on a baking tray, and roast for 30 minutes

  • Allow vegetables to cool while preparing the pastry and lower the oven to 200C/400F

  • On a lined baking tray layer the 9 filo sheets, brushing lightly with olive oil every 3 sheets

  • Fold the edges in to create a thick border

  • Fill the pastry shell with the roasted vegetables and top with the cheese, evenly dispersed throughout

  • Drizzle with a little olive oil before baking for 15-20 minutes
