Greek yogurt cheesecake parfait

Although not your typical cheesecake, this quick and easy parfait definitely hits the spot with its sweet and tangy flavour and creamy texture. This is a great dessert to make ahead of time and is easily customizable too… Choose your favourite fruit and nuts and add them as toppings right before serving.

Serves: 4 | Prep time: 10 min | Setting time: 2-3 hours

Ingredients:

225g (8oz) cream cheese 
200g Greek yogurt (just over 1/2 cup)
2-3 Tbsp honey
1 Tbsp lemon juice
1/2 tsp vanilla extract
Pinch salt
Fresh strawberries diced
20g chopped pistachios 

Method:

  • Combine yogurt, cream cheese, lemon juice, vanilla, honey and salt in a food processor and blend until completely smooth

  • Spoon the mixture into small glasses

  • Allow to set in the fridge for 2-3 hours

  • Once set, top with a generous amount of strawberries and pistachios

  • Serve cold

Notes:

  • You can adjust the sweetness by adding more or less honey to your preference

  • These can be premade ahead of time, just add toppings right before serving 

  • Other toppings I think will work well are mango, passionfruit, blueberries and walnuts, but you can add whatever you like!
