Greek yogurt and peri-peri chicken tenders

A Greek twist on peri-peri chicken! I’m all for cooking from scratch but actually, there are times when it just makes sense to use some convenience foods to speed up the process. This marinade recipe is a perfect example because I’ve used a premade peri-peri sauce and simply added the extra ingredients to make it my own. Recipes like this are great for weekday meals when you don’t have an hour to spend but still want a flavour-packed meal.

Prep time: 10 minutes | Cook time: 15 minutes

Ingredients:

450g chicken tenders
2 tbsp yogurt
1-1.5 tbsp peri-peri sauce
1/2 tsp dried oregano
1/4 tsp sweet paprika
2 tsp extra virgin olive oil (extra for frying)

Method:

  • Combine the yogurt, peri-peri sauce, spices and olive oil and coat the chicken well. Then leave it to marinate covered in the fridge for at least 30 minutes.

  • In a frying pan, heat 1 tablespoon of extra virgin olive oil over a medium-high heat and shallow fry the chicken until cooked through (10-12 mins depending on size)

  • Be sure not to overcrowd the pan, you can cook the chicken in two batches if necessary, adding more oil for your second batch.

Notes:

  • You can use whatever garlic chilli sauce you like, in this recipe I’ve used Nando’s mild peri-peri sauce. If you have the time you can also make your own!
